Ingredients:

  • 2 cups (480g) Full-fat Plain Greek Yogurt (5% fat)
  • 3 tbsp (60g) Grade A Maple Syrup
  • 1 tsp (5g) Pure Vanilla Bean Paste
  • 1/4 cup (40g) Fresh Raspberries
  • 1/4 cup (40g) Fresh Blueberries
  • 1/2 cup (75g) Sliced Strawberries and Whole Blackberries
  • 2 tbsp (20g) Unsweetened Shredded Coconut
  • 1 tbsp (10g) Hemp Hearts

Instructions:

  1. Line a rimmed half-sheet baking pan with parchment paper or a silicone mat. In a medium mixing bowl, whisk together the Greek yogurt, maple syrup, and vanilla bean paste until completely smooth.
  2. Prepare the natural pigments by placing raspberries in one small bowl and blueberries in another. Microwave for 20 seconds, then mash with a fork. Strain through a fine-mesh sieve if desired. Mix 2 tablespoons of the white yogurt base into each fruit bowl to create pink and purple yogurt paints.
  3. Spread the remaining white yogurt onto the prepared baking sheet in an even 1/4-inch thick layer using an offset spatula.
  4. Drop small dollops of the pink and purple yogurt across the surface. Use a toothpick or wooden skewer to swirl the colors into the white base to create a marble effect.
  5. Scatter the sliced strawberries, blackberries, shredded coconut, and hemp hearts evenly over the top.
  6. Freeze for at least 3 hours or until completely firm. Once frozen, shatter the bark into shards and serve immediately.
