Ingredients:

  • 240 ml heavy whipping cream (at least 36% fat), chilled
  • 3 tbsp pink lemonade powder or concentrate
  • 2 tbsp sweetened condensed milk
  • 1 drop red food coloring (optional)
  • 355 ml lemon-lime soda (Sprite or 7-Up)
  • 4 thin rounds fresh lemon
  • 2 cups crushed or nugget ice
  • Fresh raspberries for garnish

Instructions:

  1. Place your stainless steel mixing bowl and beaters in the freezer for 10 minutes to ensure a cold environment for whipping.
  2. In the chilled bowl, combine the heavy whipping cream, sweetened condensed milk, and pink lemonade concentrate.
  3. Start the electric mixer on low to incorporate the powder, then increase to high speed. Whip until the mixture forms stiff peaks and reaches a marshmallow-fluff consistency.
  4. Fill two highball glasses with 1 cup of crushed ice each and tuck fresh lemon slices against the interior sides of the glasses.
  5. Pour the lemon-lime soda into the glasses until they are about 2 inches from the rim.
  6. Gently dollop the whipped pink foam over the soda. Garnish with fresh raspberries and serve immediately.
