- 240 ml heavy whipping cream (at least 36% fat), chilled
- 3 tbsp pink lemonade powder or concentrate
- 2 tbsp sweetened condensed milk
- 1 drop red food coloring (optional)
- 355 ml lemon-lime soda (Sprite or 7-Up)
- 4 thin rounds fresh lemon
- 2 cups crushed or nugget ice
- Fresh raspberries for garnish
Instructions:
- Place your stainless steel mixing bowl and beaters in the freezer for 10 minutes to ensure a cold environment for whipping.
- In the chilled bowl, combine the heavy whipping cream, sweetened condensed milk, and pink lemonade concentrate.
- Start the electric mixer on low to incorporate the powder, then increase to high speed. Whip until the mixture forms stiff peaks and reaches a marshmallow-fluff consistency.
- Fill two highball glasses with 1 cup of crushed ice each and tuck fresh lemon slices against the interior sides of the glasses.
- Pour the lemon-lime soda into the glasses until they are about 2 inches from the rim.
- Gently dollop the whipped pink foam over the soda. Garnish with fresh raspberries and serve immediately.
