Ingredients:
- 8 oz (225g) fettuccine or spaghetti
- 4 oz (115g) cream cheese, softened
- 1/2 cup (50g) grated parmesan cheese
- 1 cup (240ml) reserved pasta cooking water
Instructions:
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente. Reserve at least 1 cup of the starchy pasta water before draining the noodles.
- In the empty pot over low heat, add the softened cream cheese and 1/4 cup (60ml) of the reserved pasta water. Whisk constantly until the mixture is a smooth, uniform liquid.
- Return the cooked pasta to the pot. Sprinkle in the parmesan cheese while tossing the noodles with tongs. Gradually add more pasta water, one tablespoon at a time, until the sauce is glossy and clings to the pasta. Remove from heat immediately.
