Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 large bell peppers, diced
  • 14.5 oz diced tomatoes, drained
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked brown rice
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium-high heat. Add the ground beef and cook until fully browned. Stir in the diced onions and garlic, sautéing for 3-5 minutes until onions are translucent.
  3. Lower the heat to medium. Add diced bell peppers and cook for 5 minutes until they begin to soften.
  4. Stir in the drained diced tomatoes, smoked paprika, oregano, salt, and black pepper. Simmer for 2 minutes.
  5. In a large bowl, combine the skillet mixture with the cooked brown rice, stirring until evenly coated.
  6. Transfer the mixture into a greased 9x13 inch baking dish and smooth the top.
  7. Cover with shredded cheddar cheese and bake for 20-25 minutes, or until the cheese is melted and bubbling.
  8. Garnish with fresh chopped parsley before serving.
