Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 large bell peppers, diced
- 14.5 oz diced tomatoes, drained
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked brown rice
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup fresh parsley, chopped
Instructions:
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a skillet over medium-high heat. Add the ground beef and cook until fully browned. Stir in the diced onions and garlic, sautéing for 3-5 minutes until onions are translucent.
- Lower the heat to medium. Add diced bell peppers and cook for 5 minutes until they begin to soften.
- Stir in the drained diced tomatoes, smoked paprika, oregano, salt, and black pepper. Simmer for 2 minutes.
- In a large bowl, combine the skillet mixture with the cooked brown rice, stirring until evenly coated.
- Transfer the mixture into a greased 9x13 inch baking dish and smooth the top.
- Cover with shredded cheddar cheese and bake for 20-25 minutes, or until the cheese is melted and bubbling.
- Garnish with fresh chopped parsley before serving.
