Ingredients:

  • 2 large sweet potatoes (approx. 650g total), scrubbed and dried
  • 2 tbsp (30ml) extra virgin olive oil, divided
  • 1/2 tsp sea salt
  • 8 oz (225g) cremini mushrooms, sliced thin
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, finely minced
  • 5 oz (142g) fresh baby spinach, roughly chopped
  • 1/2 cup (75g) feta cheese, crumbled
  • 1/2 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Note: A hot oven is crucial for immediate steam production inside the potato.
  2. Prick the sweet potatoes several times with a fork to allow steam to escape.
  3. Rub the skins with 1 tablespoon of olive oil and sea salt.
  4. Place potatoes on a parchment lined tray and bake for 45–50 minutes until the skins are puckered and the center is soft.
  5. While potatoes roast, heat the remaining 1 tablespoon of olive oil in a large skillet over medium high heat.
  6. Add sliced mushrooms in a single layer and sear undisturbed for 3 minutes until golden brown.
  7. Add minced garlic and rosemary to the skillet, stirring for 60 seconds until fragrant to bloom the aromatics in the oil.
  8. Add the chopped spinach to the skillet in batches, tossing until just wilted.
  9. Season with cracked black pepper and remove from heat.
  10. Slice the roasted sweet potatoes in half lengthwise, fluff the interior with a fork, and top with the mushroom spinach mixture and feta.
