Ingredients:
- 2 large sweet potatoes (approx. 650g total), scrubbed and dried
- 2 tbsp (30ml) extra virgin olive oil, divided
- 1/2 tsp sea salt
- 8 oz (225g) cremini mushrooms, sliced thin
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, finely minced
- 5 oz (142g) fresh baby spinach, roughly chopped
- 1/2 cup (75g) feta cheese, crumbled
- 1/2 tsp cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Note: A hot oven is crucial for immediate steam production inside the potato.
- Prick the sweet potatoes several times with a fork to allow steam to escape.
- Rub the skins with 1 tablespoon of olive oil and sea salt.
- Place potatoes on a parchment lined tray and bake for 45–50 minutes until the skins are puckered and the center is soft.
- While potatoes roast, heat the remaining 1 tablespoon of olive oil in a large skillet over medium high heat.
- Add sliced mushrooms in a single layer and sear undisturbed for 3 minutes until golden brown.
- Add minced garlic and rosemary to the skillet, stirring for 60 seconds until fragrant to bloom the aromatics in the oil.
- Add the chopped spinach to the skillet in batches, tossing until just wilted.
- Season with cracked black pepper and remove from heat.
- Slice the roasted sweet potatoes in half lengthwise, fluff the interior with a fork, and top with the mushroom spinach mixture and feta.
