Ingredients:
- 3 large (approx. 1.5 lbs / 680g) red bell peppers, halved and deseeded
- 1 medium (approx. 6 oz / 170g) red onion, cut into quarters
- 4 cloves (approx. 12g) garlic, peeled
- 2 tbsp (30ml) extra virgin olive oil
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) black pepper
- 2 tbsp (30ml) extra virgin olive oil
- ¼ cup (30g) freshly grated Parmesan cheese
- 1 tbsp (15ml) fresh lemon juice
- ½ tsp (1g) red pepper flakes
- ½ tsp (1g) dried oregano
Instructions:
- Preheat your oven to 425°F (220°C).
- Arrange the halved peppers (skin side up), onion quarters, and garlic cloves on a baking sheet.
- Drizzle with 2 tbsp (30ml) of olive oil and season with salt and pepper.
- Roast for 25-30 minutes until the pepper skins are blistered and show mahogany colored charred spots.
- Transfer the hot peppers and onions into a large bowl and cover tightly with plastic wrap.
- Let them steam for 10 minutes. Note: This loosens the skin for easy peeling.
- Slip the charred skins off the peppers using your fingers.
- Place the steamed peppers, onions, and garlic into a blender.
- Add the remaining olive oil, Parmesan, lemon juice, red pepper flakes, and oregano.
- Blend on high for 60-90 seconds until the mixture is completely smooth.
