Ingredients:
- 3 large (approx. 1.5 lbs / 680g) red bell peppers, halved and deseeded
- 2 tbsp (30ml) extra virgin olive oil
- 1/2 tsp (3g) kosher salt
- 1 lb (450g) fusilli or rotini pasta
- 8 oz (225g) fresh mozzarella pearls
- 1/2 cup (15g) fresh basil leaves, chiffonade
- 1/4 cup (15g) red onion, finely diced
- 1/4 cup (10g) fresh parsley, chopped
- 1/3 cup (80ml) extra virgin olive oil
- 3 tbsp (45ml) balsamic vinegar
- 1 clove (5g) garlic, minced
- 1 tsp (5ml) honey
- 1/2 tsp (3g) dried oregano
Instructions:
- Preheat your broiler to high. Toss bell pepper halves with olive oil and salt on a baking sheet.
- Place the peppers cut-side up under the broiler for 5-8 minutes until the skins are blistered and blackened in spots.
- Immediately transfer hot peppers to a bowl and cover with plastic wrap for 10 minutes to steam the skins.
- Peel off the charred skins, remove any remaining seeds, and slice into 1-inch strips.
- Bring a large pot of heavily salted water to a boil and cook pasta until al dente (usually 1-2 minutes less than package directions).
- Drain the pasta and rinse briefly with cool water to stop the cooking process and remove excess starch.
- In a small jar, whisk together the balsamic vinegar, olive oil, minced garlic, honey, and oregano until emulsified.
- In a large mixing bowl, combine the cooled pasta, roasted red pepper strips, mozzarella pearls, red onion, and herbs.
- Pour the dressing over the mixture and toss gently until every piece of pasta is coated in a glossy, dark glaze.
