Ingredients:

  • 1.5 cups (150g) Old Fashioned Rolled Oats
  • 2 scoops (60g) Vanilla or Unflavored Protein Powder
  • 1 tsp Ground Cinnamon
  • 0.5 tsp Baking Soda
  • 0.25 tsp Sea Salt
  • 0.5 cup (125g) Unsweetened Applesauce
  • 1 large Egg
  • 0.25 cup (60ml) Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 0.33 cup (50g) Dark Chocolate Chips

Instructions:

  1. Preheat oven to 180°C. Line your baking sheet with parchment or a silicone mat.
  2. Combine 150g rolled oats, 60g protein powder, 1 tsp cinnamon, 0.5 tsp baking soda, and 0.25 tsp sea salt. Note: Whisking breaks up protein powder clumps.
  3. In a separate bowl, whisk 1 large egg, 125g applesauce, 60ml maple syrup, and 1 tsp vanilla extract until the mixture is completely smooth.
  4. Pour the wet mixture into the dry oats.
  5. Gently stir in 50g dark chocolate chips using a spatula.
  6. Let the dough sit for 10 minutes at room temperature. Note: This allows the oats to soften.
  7. Portion out 12 even mounds onto the prepared baking sheet.
  8. Use the back of a damp spoon to press them down, as they won't spread much.
  9. Bake 12 minutes. Cook until the edges are firm and the tops look matte.
  10. Let them sit for 5 minutes before moving to a wire rack to firm up.
