Ingredients:
- 3 cups (450g) Red, Yellow, and Orange Bell Peppers, finely diced
- 1 cup (150g) English Cucumber, diced
- ½ cup (75g) Red Onion, finely minced
- ½ cup (60g) Kalamata Olives, pitted and halved
- ½ cup (75g) Feta Cheese, crumbled
- ¼ cup (15g) Fresh Parsley, chopped
- 2 tbsp (10g) Fresh Dill, chopped
- 3 tbsp (45ml) Extra Virgin Olive Oil
- 2 tbsp (30ml) Balsamic Vinegar
- 1 clove (5g) Garlic, minced
- ½ tsp (3g) Dried Oregano
- ½ tsp (3g) Salt
- ¼ tsp (1g) Black Pepper
Instructions:
- Cut the tri-color peppers into consistent 1/4-inch cubes.
- Finely mince the red onion and dice the cucumber to match the size of the peppers.
- Place the peppers, cucumber, onion, olives, and fresh herbs into a large mixing bowl.
- In a small jar, combine olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper.
- Shake vigorously for 30 seconds or whisk until the mixture is opaque and thickened.
- Pour the dressing over the vegetable mixture and gently fold with a spoon until every piece is glistening.
- Fold in the crumbled feta last to prevent the cheese from breaking down.
