Instructions:
- Preheat your oven to 350°F (175°C) and line large baking sheets with parchment paper.
- In a large mixing bowl, cream together the cool unsalted butter and granulated sugar until smooth but not overly aerated. (Note: This is a specific technique for this recipe to maintain dough structure.)
- Beat in the cold egg, vanilla extract, and almond extract until fully combined.
- Whisk together the flour and sea salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, mixing until a stiff dough forms.
- Roll the dough out on a lightly floured surface to 1/4 inch thickness. Use a Christmas tree cookie cutter to cut shapes.
- Place cookies on the prepared baking sheets and bake for 10 minutes, or until the edges are just set but not browned.
- While cookies cool, whisk together powdered sugar, milk, and light corn syrup to create the glaze. Tint with green gel food coloring.
