Ingredients:

  • 225g unsalted butter, cool but pliable
  • 200g granulated white sugar
  • 1 large egg, cold
  • 5ml pure vanilla extract
  • 2ml almond extract
  • 375g all-purpose flour
  • 3g fine sea salt
  • 250g powdered sugar, sifted
  • 30ml-45ml whole milk
  • 15ml light corn syrup
  • Gel food coloring (green)
  • Sanding sugar for decoration
  • Gold star sprinkles

Instructions:

  1. Preheat your oven to 350°F (175°C) and line large baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the cool unsalted butter and granulated sugar until smooth but not overly aerated. (Note: This is a specific technique for this recipe to maintain dough structure.)
  3. Beat in the cold egg, vanilla extract, and almond extract until fully combined.
  4. Whisk together the flour and sea salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, mixing until a stiff dough forms.
  5. Roll the dough out on a lightly floured surface to 1/4 inch thickness. Use a Christmas tree cookie cutter to cut shapes.
  6. Place cookies on the prepared baking sheets and bake for 10 minutes, or until the edges are just set but not browned.
  7. While cookies cool, whisk together powdered sugar, milk, and light corn syrup to create the glaze. Tint with green gel food coloring.
  8. Pipe or spread the glaze onto cooled cookies. Immediately garnish with sanding sugar and a gold star sprinkle.
