Ingredients:
- 1 large Red Onion (approx. 300g)
- 2 cloves Garlic, smashed
- 0.75 cup Apple Cider Vinegar
- 0.25 cup Water
- 1.5 tsp Fine Sea Salt
- 3 tbsp Hot Honey
- 0.5 tsp Red Pepper Flakes
- 0.5 tsp Black Peppercorns
Instructions:
- Peel the red onion and cut it in half from root to stem. Using a mandoline or a sharp knife, slice the onion into paper-thin half-moons. Pack the sliced onions and smashed garlic tightly into a clean 16 oz glass jar.
- In a small non-reactive saucepan over medium heat, combine the apple cider vinegar, water, sea salt, and peppercorns. Bring to a gentle simmer and stir until the salt is completely dissolved.
- Remove the saucepan from heat and whisk in the hot honey and red pepper flakes until the liquid is clear and the honey is fully integrated.
- Carefully pour the hot brine over the onions in the jar, ensuring they are completely submerged. Use a spoon to press the onions down, let cool at room temperature for 30 minutes, then seal and refrigerate.
