Ingredients:

  • 1 large Red Onion (approx. 300g)
  • 2 cloves Garlic, smashed
  • 0.75 cup Apple Cider Vinegar
  • 0.25 cup Water
  • 1.5 tsp Fine Sea Salt
  • 3 tbsp Hot Honey
  • 0.5 tsp Red Pepper Flakes
  • 0.5 tsp Black Peppercorns

Instructions:

  1. Peel the red onion and cut it in half from root to stem. Using a mandoline or a sharp knife, slice the onion into paper-thin half-moons. Pack the sliced onions and smashed garlic tightly into a clean 16 oz glass jar.
  2. In a small non-reactive saucepan over medium heat, combine the apple cider vinegar, water, sea salt, and peppercorns. Bring to a gentle simmer and stir until the salt is completely dissolved.
  3. Remove the saucepan from heat and whisk in the hot honey and red pepper flakes until the liquid is clear and the honey is fully integrated.
  4. Carefully pour the hot brine over the onions in the jar, ensuring they are completely submerged. Use a spoon to press the onions down, let cool at room temperature for 30 minutes, then seal and refrigerate.
