Ingredients:
- 1 lb baby bok choy, halved lengthwise
- 1 tbsp neutral oil
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp toasted sesame oil
- 1 tsp honey
- 1 tsp rice vinegar
Instructions:
- Wash the baby bok choy thoroughly to remove grit and pat completely dry with a paper towel to ensure proper searing.
- Heat the neutral oil in a wok or large cast iron skillet over medium-high heat until shimmering. Place the bok choy cut-side down and cook undisturbed for 2–3 minutes until golden-brown and charred.
- Push the bok choy to the edges of the pan and add the minced ginger and garlic to the center. Sauté for 30 seconds until fragrant.
- Pour the soy sauce, sesame oil, honey, and rice vinegar over the vegetables. Toss quickly for 1–2 minutes until leaves are wilted and bright green, then remove from heat immediately.
