Ingredients:

  • 1 lb baby bok choy, halved lengthwise
  • 1 tbsp neutral oil
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 1 tsp honey
  • 1 tsp rice vinegar

Instructions:

  1. Wash the baby bok choy thoroughly to remove grit and pat completely dry with a paper towel to ensure proper searing.
  2. Heat the neutral oil in a wok or large cast iron skillet over medium-high heat until shimmering. Place the bok choy cut-side down and cook undisturbed for 2–3 minutes until golden-brown and charred.
  3. Push the bok choy to the edges of the pan and add the minced ginger and garlic to the center. Sauté for 30 seconds until fragrant.
  4. Pour the soy sauce, sesame oil, honey, and rice vinegar over the vegetables. Toss quickly for 1–2 minutes until leaves are wilted and bright green, then remove from heat immediately.
