Ingredients:
- 1 lb fresh green beans, ends trimmed
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, very thinly sliced
- 1/2 cup feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 clove garlic, minced
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 tsp fresh oregano, finely chopped
Instructions:
- Bring a large pot of heavily salted water to a rolling boil. Add trimmed green beans and boil for exactly 3 minutes until bright green and crisp-tender.
- Immediately transfer beans to a large bowl filled with ice and cold water. Let sit for 3 minutes to halt the cooking process. Drain and pat completely dry with a kitchen towel.
- In a small jar or bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, sea salt, black pepper, and fresh oregano until emulsified.
- In a large serving bowl, combine the dried green beans, halved cherry tomatoes, and sliced red onion. Toss with the dressing to coat.
- Gently fold in the crumbled feta cheese just before serving to maintain its texture.
