Ingredients:

  • 1 lb fresh green beans, ends trimmed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, very thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tsp fresh oregano, finely chopped

Instructions:

  1. Bring a large pot of heavily salted water to a rolling boil. Add trimmed green beans and boil for exactly 3 minutes until bright green and crisp-tender.
  2. Immediately transfer beans to a large bowl filled with ice and cold water. Let sit for 3 minutes to halt the cooking process. Drain and pat completely dry with a kitchen towel.
  3. In a small jar or bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, sea salt, black pepper, and fresh oregano until emulsified.
  4. In a large serving bowl, combine the dried green beans, halved cherry tomatoes, and sliced red onion. Toss with the dressing to coat.
  5. Gently fold in the crumbled feta cheese just before serving to maintain its texture.
