Ingredients:

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 cup frozen spinach, thawed and squeezed completely dry
  • 1/2 tsp garlic powder

Instructions:

  1. Preheat your oven to 350°F (175°C). Generously grease a 12 cup standard muffin tin with non stick cooking spray or avocado oil. Note: Don't skip the grease, even with non stick pans.
  2. Combine the 6 large eggs, 1 cup cottage cheese, 1/4 tsp salt, and 1/4 tsp black pepper in a high speed blender.
  3. Pulse on high for 30 seconds until the mixture is completely smooth and pale yellow.
  4. Pour the blended base into a mixing bowl.
  5. Gently fold in the 1 cup shredded sharp cheddar, 1 cup squeezed dry spinach, and 1/2 tsp garlic powder. Note: Use a spatula to keep the air in the mixture.
  6. Divide the batter evenly among the 12 muffin cups. Fill each about 2/3 full to allow for rising.
  7. Bake for 20-25 minutes until the edges are lightly browned and the centers have just a slight jiggle.
  8. Let the bites cool in the pan for 5 minutes before removing them.
