Ingredients:
- 1 lb (450g) chicken breast, diced into ½ inch pieces
- 3 tbsp (45ml) vegetable oil, divided
- 3 cloves (15g) garlic, minced
- 1 tbsp (15g) fresh ginger, grated
- 4 cups (300g) baby bok choy, stems sliced and leaves roughly chopped
- 4 cups (600g) chilled, day-old jasmine rice
- 3 large (150g) eggs, lightly beaten
- 3 stalks (30g) green onions, sliced
- 3 tbsp (45ml) soy sauce
- 1 tbsp (15ml) oyster sauce
- 1 tsp (5ml) toasted sesame oil
- ½ tsp (2.5g) white pepper
Instructions:
- Whisk the soy sauce, oyster sauce, sesame oil, and white pepper in a small bowl. Break up the chilled rice with your fingers to prevent large clumps from forming in the pan.
- Heat 1 tbsp of oil over medium high heat. Add the diced chicken and cook for 4-5 mins until golden and just cooked through. Remove chicken and set it aside.
- Add another 1 tbsp of oil to the same pan. Sauté the minced garlic and grated ginger for 30 seconds until they smell nutty and fragrant.
- Pour in the beaten eggs. Stir quickly for about 1 minute until the eggs are just set and silky.
- Turn the heat to high and add the last tbsp of oil. Toss in the chilled rice and stir fry for 3-4 mins, pressing the grains against the pan until they start to toast and pop.
- Pour the savory sauce over the rice. Toss everything together for 1-2 mins until the rice is a uniform mahogany color.
- Fold the cooked chicken and the sliced baby bok choy into the pan. Cook for 2 mins until the bok choy is crisp tender.
- Stir in the sliced green onions and remove from heat.
