Ingredients:
- 1/2 cup (60g) all-purpose flour
- 1/3 cup (65g) brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 3 tbsp (42g) cold unsalted butter, cubed
- 1 cup (240g) apple pie filling
- 1/2 tsp (1g) vanilla extract
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 2 tsp (8g) baking powder
- 1 tsp (2g) baking soda
- 1 tbsp (8g) ground cinnamon
- 1/2 tsp (3g) salt
- 1 cup (240ml) buttermilk, room temperature
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
Instructions:
- In a small bowl, combine 1/2 cup flour, brown sugar, and 1 tsp cinnamon. Use a fork or fingers to rub the cold butter into the mixture until coarse, pea-sized crumbs form. Set aside.
- Stir 1/2 tsp vanilla extract into the apple pie filling to brighten the flavor. Set aside.
- Whisk together 2 cups flour, granulated sugar, baking powder, baking soda, 1 tbsp cinnamon, and salt until no clumps remain.
- In a separate bowl, whisk together the buttermilk, melted butter, eggs, and 1 tsp vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and fold gently with a spatula just until combined.
- Fill each muffin liner halfway with batter, spoon 1 generous tablespoon of apple pie filling into the center, and top with the remaining batter.
- Sprinkle the prepared cinnamon streusel evenly over the top of each muffin.
- Bake for 25 minutes or until a toothpick inserted into the cake portion comes out clean.
