Ingredients:

  • 1/2 cup (60g) all-purpose flour
  • 1/3 cup (65g) brown sugar, packed
  • 1 tsp (2g) ground cinnamon
  • 3 tbsp (42g) cold unsalted butter, cubed
  • 1 cup (240g) apple pie filling
  • 1/2 tsp (1g) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 2 tsp (8g) baking powder
  • 1 tsp (2g) baking soda
  • 1 tbsp (8g) ground cinnamon
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) buttermilk, room temperature
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. In a small bowl, combine 1/2 cup flour, brown sugar, and 1 tsp cinnamon. Use a fork or fingers to rub the cold butter into the mixture until coarse, pea-sized crumbs form. Set aside.
  2. Stir 1/2 tsp vanilla extract into the apple pie filling to brighten the flavor. Set aside.
  3. Whisk together 2 cups flour, granulated sugar, baking powder, baking soda, 1 tbsp cinnamon, and salt until no clumps remain.
  4. In a separate bowl, whisk together the buttermilk, melted butter, eggs, and 1 tsp vanilla until smooth.
  5. Pour the wet ingredients into the dry ingredients and fold gently with a spatula just until combined.
  6. Fill each muffin liner halfway with batter, spoon 1 generous tablespoon of apple pie filling into the center, and top with the remaining batter.
  7. Sprinkle the prepared cinnamon streusel evenly over the top of each muffin.
  8. Bake for 25 minutes or until a toothpick inserted into the cake portion comes out clean.
